- 2 cups elbow macaroni cooked and drained
- 3 large eggs hard-boiled and chopped
- 1 cup celery chopped
- 1 cup red bell pepper chopped
- ½ cup onion finely chopped
- 2 cups mayonnaise
- ¼ cup white vinegar
- ¼ cup sugar
- 2 tablespoon yellow mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
Cook macaroni according to package instructions. Drain and let cool.
In a large bowl, combine mayonnaise, white vinegar, sugar, mustard, salt, and pepper. Whisk until smooth.
Add cooked macaroni, chopped eggs, celery, red bell pepper, and onion to the bowl. Mix well to coat everything evenly.
Cover and refrigerate for at least 1 hour before serving to let the flavors meld together.
