Ingredients

  • 1 cup cake flour sifted
  • 1.5 cups granulated sugar divided
  • 12 large egg whites room temperature
  • 1.5 teaspoon cream of tartar
  • 0.5 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, sift together the flour and ½ cup of sugar. Set aside.
  3. In a large bowl, beat egg whites until foamy. Add cream of tartar and salt. Continue to beat until soft peaks form.
  4. Gradually add the remaining sugar, beating until stiff peaks form. Fold in vanilla extract.
  5. Gently fold in the flour mixture, ¼ cup at a time, until fully incorporated.
  6. Spoon the batter into an ungreased tube pan. Smooth the top with a spatula.
  7. Bake for 40-45 minutes, or until the cake springs back when touched lightly.
  8. Invert the pan and let the cake cool completely before removing from the pan.
