Ingredients 

Main Ingredients

  • 500 g Chicken Thighs boneless, skinless
  • 3 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 2 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Paprika
  • 1 teaspoon Ground Turmeric
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper freshly ground
  • 4 Pita Bread
  • 1 cup Yogurt for serving
  • 1 cup Mixed Vegetables sliced (tomatoes, cucumbers, onions)

Instructions 

  1. 1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, ground turmeric, salt, and black pepper.
  2. 2. Add the chicken thighs to the bowl and coat them well with the marinade. Let it marinate for at least 1 hour or overnight in the fridge.
  3. 3. Preheat your grill to medium-high heat. Grill the chicken thighs for about 5-7 minutes on each side, or until fully cooked.
  4. 4. Remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
  5. 5. Warm the pita bread on the grill for a minute on each side.
  6. 6. Assemble the sandwiches by placing the sliced chicken, mixed vegetables, and a dollop of yogurt inside the pita bread. Serve immediately.
