Instructions
Preheat your oven to 350°F (175°C) and grease a muffin tin.
In a mixing bowl, mash the ripe bananas with a fork until smooth.
Stir the melted butter into the mashed bananas.
Mix in the beaten egg, baking soda, and salt.
Stir in the sugar, flour, and vanilla extract until just combined.
Pour the batter into the prepared muffin tin, filling each cup about ¾ full.
Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
