garlic, minced

carrots, sliced

potatoes, diced

Guinness beer

beef broth

tomato paste

teaspoon
dried thyme

teaspoon
dried rosemary
to taste
salt and pepper
Instructions
1. Heat the olive oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef and set aside.
2. In the same pot, add the onion and garlic. Cook until softened.
3. Add the carrots and potatoes, cooking for a few minutes.
4. Return the beef to the pot. Pour in the Guinness and beef broth. Stir in the tomato paste, thyme, and rosemary. Season with salt and pepper.
5. Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the beef is tender.
6. Serve hot and enjoy!
