Main Ingredients
- 2 lbs Beef shank cut into chunks
- 8 cups Water
- 1 piece Onion quartered
- 2 pieces Potatoes peeled and quartered
- 1 bunch Bok choy separated
- 1 piece Corn on the cob cut into 3-inch pieces
- 2 tablespoon Fish sauce
- to taste Salt and pepper
1. In a large pot, bring water to a boil.
2. Add the beef shank and onion. Simmer for 1.5 hours or until the beef is tender.
3. Add the potatoes and corn. Cook for another 10 minutes.
4. Add the bok choy and fish sauce. Season with salt and pepper to taste. Cook for another 5 minutes.
5. Serve hot with rice.
