Ingredients

  • 4 medium beets trimmed and scrubbed
  • ¼ cup walnuts toasted and chopped
  • 2 oz goat cheese crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Wrap beets in aluminum foil and place on a baking sheet. Roast for 45 minutes or until tender.
  3. Let beets cool, then peel and cut into cubes.
  4. In a mixing bowl, combine beets, walnuts, and goat cheese.
  5. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste. Toss gently to combine.
  6. Serve immediately or chill in the refrigerator before serving.
