Main Ingredients
- 4 cups beets, peeled and diced
- 1 cup carrots, diced
- 1 cup potatoes, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- to taste salt and pepper
- 1 tablespoon lemon juice
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, and sauté until softened.
3. Add the diced beets, carrots, and potatoes to the pot.
4. Pour in the vegetable broth and bring to a boil.
5. Reduce heat and simmer for about 30 minutes, or until the vegetables are tender.
6. Use a blender to puree the soup until smooth.
7. Stir in the lemon juice and season with salt and pepper to taste.
8. Serve hot and enjoy!
