- 1 cup rice cooked
- 1 can black beans drained and rinsed
- 1 cup corn frozen or canned
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 large tortillas
- 1 cup cheese shredded, optional
1. Cook the rice according to package instructions.
2. In a skillet, combine black beans, corn, salsa, cumin, and chili powder. Cook over medium heat until heated through.
3. Warm the tortillas in a dry skillet or microwave.
4. To assemble, place a portion of rice and bean mixture in the center of each tortilla. Add cheese if using.
5. Fold the sides of the tortilla over the filling and roll up to enclose. Serve immediately.
