- 1 can black beans drained and rinsed
- ½ cup bread crumbs
- ¼ cup onion finely chopped
- 1 clove garlic minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 egg egg beaten
- ½ cup corn frozen or canned
- 1 tablespoon olive oil for cooking
1. In a food processor, mash the black beans until thick and pasty.
2. In a mixing bowl, combine the mashed black beans, bread crumbs, onion, garlic, chili powder, cumin, egg, and corn. Mix well.
3. Form the mixture into 4 patties.
4. Heat the olive oil in a skillet over medium heat. Cook the patties for about 5 minutes on each side, until they are heated through and slightly crispy.
