Main Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter softened
- 1 cup sugar
- 2 large eggs
- 4 ripe bananas mashed
- 1 teaspoon vanilla extract
- 1 cup blueberries fresh or frozen
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
In a mixing bowl, whisk together the flour, baking soda, and salt.
In another bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition.
Stir in the mashed bananas and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the blueberries.
Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
