Ingredients 

Main Ingredients

  • 2 cups Broccoli florets chopped
  • 2 cups Pasta cooked and cooled
  • 1 cup Cherry tomatoes halved
  • ¼ cup Red onion finely chopped
  • ½ cup Feta cheese crumbled
  • ¼ cup Olive oil
  • 2 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic minced
  • to taste Salt and pepper

Instructions 

  1. 1. Cook pasta according to package instructions. Drain and let cool.
  2. 2. In a large pot of boiling water, blanch broccoli florets for 2 minutes. Drain and rinse under cold water.
  3. 3. In a large mixing bowl, combine cooked pasta, broccoli, cherry tomatoes, red onion, and feta cheese.
  4. 4. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper.
  5. 5. Pour dressing over the salad and toss to combine.
  6. 6. Serve immediately or refrigerate for later.
