Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 potatoes, peeled and diced
  • 6 cups chicken broth
  • 1 lb kale, chopped
  • 8 oz chorizo, sliced
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  2. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  3. Use a blender or immersion blender to puree the soup until smooth.
  4. Return the soup to the pot. Add the chopped kale and sliced chorizo. Simmer for another 10-15 minutes until the kale is tender.
  5. Season with salt and pepper to taste. Serve hot.
