Ingredients 

Main Ingredients

  • 1 large Zucchini sliced
  • 1 large Red Bell Pepper sliced
  • 1 large Yellow Squash sliced
  • 1 medium Red Onion sliced
  • 2 tablespoon Olive Oil
  • 1 pinch Salt to taste
  • 1 pinch Black Pepper to taste
  • 4 slices Whole Grain Bread toasted
  • 4 tablespoon Hummus

Instructions 

  1. 1. Preheat grill to medium-high heat.
  2. 2. Toss zucchini, red bell pepper, yellow squash, and red onion with olive oil, salt, and black pepper.
  3. 3. Grill vegetables for 5-7 minutes, turning occasionally, until tender and slightly charred.
  4. 4. Spread hummus on each slice of toasted whole grain bread.
  5. 5. Layer grilled vegetables on two slices of bread and top with the remaining slices.
  6. 6. Serve immediately and enjoy!
