- 2 cups yellow split peas rinsed and drained
- 1 large onion chopped
- 2 medium carrots chopped
- 2 stalks celery chopped
- 2 cloves garlic minced
- 1 pound ham hock
- 8 cups chicken broth
- 1 teaspoon dried thyme
- to taste salt and pepper
1. In a large pot, combine the yellow split peas, onion, carrots, celery, garlic, ham hock, chicken broth, thyme, and bay leaf.
2. Bring to a boil, then reduce heat and simmer for about 90 minutes, or until peas are tender.
3. Remove the ham hock, chop the meat, and return it to the pot. Discard the bone.
4. Season with salt and pepper to taste. Serve hot.
