Caprese Salad with Balsamic Reduction

Main Ingredients
- 4 ripe tomatoes, sliced
- 1 lb fresh mozzarella, sliced
- 1 bunch fresh basil leaves
- ½ cup balsamic vinegar
- 2 tablespoon olive oil
- to taste salt and pepper
1. In a small saucepan, bring the balsamic vinegar to a boil. Reduce heat and simmer until the vinegar has reduced by half and is thickened, about 10-15 minutes. Let cool.
2. Arrange the tomato and mozzarella slices on a platter, alternating and overlapping them. Tuck basil leaves between the slices.
3. Drizzle the olive oil and balsamic reduction over the salad. Season with salt and pepper to taste.
