- ½ cup unpopped popcorn kernels
- 1 cup brown sugar
- ¼ cup corn syrup
- ½ cup butter
- ½ teaspoon baking soda
- 1 teaspoon vanilla extract
Preheat oven to 250°F (120°C). Pop the popcorn kernels and place them in a large bowl.
In a saucepan, combine brown sugar, corn syrup, and butter. Bring to a boil over medium heat, stirring constantly. Boil for 5 minutes without stirring.
Remove from heat and stir in baking soda and vanilla extract. Pour caramel mixture over popcorn and stir to coat evenly.
Spread the coated popcorn onto a baking sheet. Bake for 1 hour, stirring every 15 minutes.
Remove from oven and let cool completely before breaking into pieces.
