Ingredients 

Main Ingredients

  • 1 lb White fish fillets cut into chunks
  • 1 cup Coconut milk
  • 2 cups Fish stock
  • 1 cup Diced tomatoes canned or fresh
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Bell pepper chopped
  • 1 teaspoon Thyme dried
  • 1 teaspoon Paprika
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black pepper or to taste
  • 2 Scallions chopped
  • 1 Lime juiced

Instructions 

  1. 1. Heat some oil in a large pot over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté until softened.
  2. 2. Add the diced tomatoes, thyme, paprika, salt, and black pepper. Cook for another 5 minutes.
  3. 3. Pour in the fish stock and coconut milk. Bring to a simmer.
  4. 4. Add the fish chunks and cook until the fish is cooked through, about 10 minutes.
  5. 5. Stir in the chopped scallions and lime juice. Adjust seasoning if needed.
  6. 6. Serve hot and enjoy!
