Main Ingredients
- 2 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 0.5 teaspoon salt
- 1 teaspoon ground cinnamon
- 0.5 teaspoon ground nutmeg
- 0.5 teaspoon ground ginger
- 1 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots
- 1 cup chopped walnuts optional
Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch pan.
In a large bowl, mix flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
Add oil and eggs; mix until well combined.
Fold in grated carrots and walnuts.
Pour batter into prepared pan.
Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
