- 4 cups carrots, grated
- 1 cup raisins
- ½ cup mayonnaise
- 2 tablespoons lemon juice
- 1 pinch salt to taste
In a large mixing bowl, combine the grated carrots and raisins.
In a small bowl, mix the mayonnaise, lemon juice, and salt.
Pour the dressing over the carrot and raisin mixture. Stir well to combine.
Chill in the refrigerator for at least 30 minutes before serving.
