Main Ingredients
- 4 fillets Catfish about 6 oz each
- 1 cup Cornmeal
- 1 cup All-purpose flour
- 1 tablespoon Cajun seasoning
- 2 cups Buttermilk
- 4 French rolls split and toasted
- 1 cup Mayonnaise
- 1 tablespoon Hot sauce
- 1 cup Shredded lettuce
- 1 cup Sliced tomatoes
- 1 cup Pickles
1. In a mixing bowl, combine cornmeal, flour, and Cajun seasoning.
2. Dip catfish fillets in buttermilk, then dredge in the cornmeal mixture.
3. Heat oil in a frying pan over medium heat. Fry the fillets for about 3-4 minutes on each side until golden brown and cooked through.
4. In a small bowl, mix mayonnaise and hot sauce.
5. Spread the spicy mayo on the toasted French rolls.
6. Assemble the sandwiches by layering the fried catfish, shredded lettuce, sliced tomatoes, and pickles.
7. Serve immediately and enjoy!
