Ingredients

  • 1 head Cauliflower chopped into florets
  • 1 cup Cherry Tomatoes halved
  • ½ cup Red Onion thinly sliced
  • ¼ cup Olive Oil
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Bring a pot of water to boil and blanch the cauliflower florets for 3-4 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cauliflower, cherry tomatoes, and red onion.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  4. 4. Pour the dressing over the salad and toss to combine.
  5. 5. Serve immediately or refrigerate for later.
