Ingredients

  • 4 Chicken breasts, pounded thin
  • 1 cup Breadcrumbs
  • 2 Eggs, beaten
  • 1 cup Flour
  • 4 Bolillo rolls, sliced
  • 1 Avocado, sliced
  • 1 cup Lettuce, shredded
  • 1 Tomato, sliced
  • ½ cup Mayonnaise
  • ½ cup Refried beans
  • to taste Salt and pepper

Instructions 

  1. 1. Season chicken breasts with salt and pepper.
  2. 2. Dredge chicken in flour, dip in beaten eggs, and coat with breadcrumbs.
  3. 3. Heat oil in skillet over medium heat. Fry chicken until golden and cooked through, about 3-4 minutes per side.
  4. 4. Spread mayonnaise and refried beans on bolillo rolls.
  5. 5. Assemble tortas with fried chicken, avocado, lettuce, and tomato.
