Main Ingredients
- 2 lbs chicken thighs boneless, skinless
- 1 large onion chopped
- 3 cloves garlic minced
- 2 cans hominy drained and rinsed
- 6 cups chicken broth
- 2 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper or to taste
- 2 tablespoon vegetable oil
- 1 bunch cilantro chopped, for garnish
- 1 lime cut into wedges, for serving
Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
Add the garlic and cook for another minute.
Add the chicken thighs and cook until browned on all sides.
Add the chicken broth, hominy, cumin, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 45 minutes.
Remove the chicken thighs, shred them with a fork, and return to the pot. Simmer for another 10 minutes.
Serve hot, garnished with chopped cilantro and lime wedges.
