- 2 cups Cooked Chicken, chopped
- ½ cup Mayonnaise
- ¼ cup Celery, chopped
- ¼ cup Red Onion, chopped
- 1 tablespoon Lemon Juice
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 8 slices Bread
- 4 leaves Lettuce
In a mixing bowl, combine the chopped chicken, mayonnaise, celery, red onion, lemon juice, salt, and black pepper. Mix well.
Spread the chicken salad mixture evenly onto 4 slices of bread.
Top each with a lettuce leaf and another slice of bread.
Serve immediately or refrigerate for later.
