  • 2 lbs potatoes peeled and cubed
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 cup celery chopped
  • ½ cup onion chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 hard-boiled eggs chopped
  • 1 tablespoon vinegar
  • 1 tablespoon sugar

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine mayonnaise, mustard, celery, onion, salt, pepper, vinegar, and sugar.
  3. 3. Add the cooled potatoes and chopped eggs to the bowl. Mix gently until everything is well coated.
