  • 14 oz sweetened shredded coconut
  • 14 oz sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 large egg whites
  • ¼ teaspoon salt

Instructions 

  1. Preheat oven to 325°F (165°C). Line baking sheets with parchment paper.
  2. In a large bowl, mix coconut, condensed milk, and vanilla extract.
  3. In another bowl, beat egg whites and salt until stiff peaks form.
  4. Gently fold egg whites into the coconut mixture.
  5. Drop tablespoonfuls of the mixture onto prepared baking sheets.
  6. Bake for 20-25 minutes, until golden brown.
  7. Let cool on baking sheets for a few minutes, then transfer to wire racks to cool completely.
