Ingredients

  • 1 package cheese tortellini about 10 oz
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup red onion thinly sliced
  • ½ cup kalamata olives pitted and halved
  • ½ cup feta cheese crumbled
  • ¼ cup olive oil
  • 2 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Cook the tortellini according to the package instructions. Drain and let cool.
  2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper.
  4. Add the cooled tortellini to the mixing bowl with the vegetables. Pour the dressing over the salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
