Ingredients

  • 1 cup cottage cheese
  • 3 eggs
  • ½ cup all-purpose flour
  • ¼ cup milk
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions 

  1. In a mixing bowl, whisk together the cottage cheese, eggs, milk, sugar, and vanilla extract until well combined.
  2. In another bowl, mix the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  3. Heat a non-stick skillet over medium heat and lightly grease it. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  4. Serve warm with your favorite toppings.
