- 6 Eggs hard-boiled
- 2 tablespoon Mayonnaise
- 1 teaspoon Curry Powder
- 1 teaspoon Mustard
- 1 tablespoon Chopped Fresh Cilantro
- 8 slices Bread toasted
- to taste Salt and Pepper
1. Peel and chop the hard-boiled eggs.
2. In a mixing bowl, combine the chopped eggs, mayonnaise, curry powder, mustard, and chopped cilantro. Mix well.
3. Season with salt and pepper to taste.
4. Spread the egg mixture evenly on four slices of toasted bread. Top with the remaining slices to make sandwiches.
5. Serve immediately or wrap and refrigerate for later.
