  • 4 cups Dandelion greens washed and chopped
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber sliced
  • ¼ cup Red onion thinly sliced
  • ¼ cup Feta cheese crumbled
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Honey
  • to taste Salt and pepper

Instructions 

  1. 1. In a large mixing bowl, combine dandelion greens, cherry tomatoes, cucumber, and red onion.
  2. 2. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
  3. 3. Pour the dressing over the salad and toss to combine.
  4. 4. Sprinkle feta cheese on top before serving.
