Ingredients

  • 2 large eggplants sliced into ¼ inch rounds
  • 2 cups breadcrumbs seasoned
  • 3 cups marinara sauce
  • 2 cups mozzarella cheese shredded
  • ½ cup Parmesan cheese grated
  • 2 eggs beaten
  • 1 cup flour
  • 1 cup olive oil for frying

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  3. Dip each eggplant slice in flour, then egg, then breadcrumbs.
  4. Heat olive oil in a frying pan and fry eggplant slices until golden brown.
  5. Layer fried eggplant, marinara sauce, and cheeses in a baking dish.
  6. Bake for 20-25 minutes until cheese is melted and bubbly.
