Instructions
Preheat the grill to medium-high heat.
Grill the corn for about 10 minutes, turning occasionally, until charred.
Cut the kernels off the cob and place them in a mixing bowl.
Add mayonnaise, cotija cheese, lime juice, chili powder, cilantro, and salt to the bowl. Mix well.
Serve immediately or chill in the fridge for later.
