Farmers Market Vegetarian Quesadillas
Fresh and delicious quesadillas made with seasonal vegetables from the farmers market.

Main Ingredients
- 1 cup Bell peppers, diced
- 1 cup Zucchini, diced
- 1 cup Corn kernels
- 1 cup Black beans, cooked
- 1 cup Shredded cheese
- 4 large Flour tortillas
- 2 tablespoon Olive oil
Heat 1 tablespoon of olive oil in a skillet over medium heat.
Add bell peppers, zucchini, and corn. Cook until tender, about 5 minutes.
Stir in black beans and cook for another 2 minutes.
Remove vegetables from skillet and set aside.
Wipe skillet clean and heat remaining 1 tablespoon of olive oil over medium heat.
Place one tortilla in the skillet, sprinkle with cheese, add vegetable mixture, and top with another tortilla.
Cook until golden brown, about 2-3 minutes per side. Repeat with remaining tortillas.
Cut quesadillas into wedges and serve warm.
