Ingredients 

Main Ingredients

  • 1 cup Bell peppers, diced
  • 1 cup Zucchini, diced
  • 1 cup Corn kernels
  • 1 cup Black beans, cooked
  • 1 cup Shredded cheese
  • 4 large Flour tortillas
  • 2 tablespoon Olive oil

Instructions 

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add bell peppers, zucchini, and corn. Cook until tender, about 5 minutes.
  3. Stir in black beans and cook for another 2 minutes.
  4. Remove vegetables from skillet and set aside.
  5. Wipe skillet clean and heat remaining 1 tablespoon of olive oil over medium heat.
  6. Place one tortilla in the skillet, sprinkle with cheese, add vegetable mixture, and top with another tortilla.
  7. Cook until golden brown, about 2-3 minutes per side. Repeat with remaining tortillas.
  8. Cut quesadillas into wedges and serve warm.
