Ingredients 

Main Ingredients

  • 4 Large tortillas
  • 6 Eggs beaten
  • 1 cup Shredded cheese
  • 1 cup Cooked sausage or bacon crumbled
  • 1 Bell pepper diced
  • 1 Onion diced
  • to taste Salt and pepper

Instructions 

  1. 1. In a skillet, cook the bell pepper and onion until soft.
  2. 2. Add the beaten eggs to the skillet and scramble until cooked through.
  3. 3. Stir in the cooked sausage or bacon and season with salt and pepper.
  4. 4. Remove from heat and let the mixture cool slightly.
  5. 5. Lay out the tortillas and divide the egg mixture evenly among them.
  6. 6. Sprinkle shredded cheese over the egg mixture.
  7. 7. Roll up the tortillas, folding in the sides as you go.
  8. 8. Wrap each burrito in foil and place in a freezer bag.
  9. 9. To reheat, remove foil and microwave for 2-3 minutes or until heated through.
