Ingredients 

Main Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • ¼ cup molasses
  • 2 tablespoons granulated sugar, for rolling

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, beat butter and 1 cup sugar until light and fluffy. Add egg and molasses, and mix well.
  4. Gradually add dry ingredients to wet ingredients, mixing until combined.
  5. Roll dough into 1-inch balls, then roll in remaining sugar. Place on baking sheet.
  6. Bake for 8-10 minutes, until edges are set. Cool on wire rack.
