Instructions
Heat the oil in a large pot over medium heat. Add the goat meat and brown on all sides.
Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
Pour in the beef broth, add salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer for 1.5 hours.
Add the sliced carrots and diced potatoes. Continue to simmer for another 30 minutes, or until vegetables are tender.
Adjust seasoning if necessary. Serve hot.
