Ingredients

  • 6 medium Potatoes peeled and cubed
  • 1 cup Red Onion finely chopped
  • 1 cup Cucumber diced
  • ½ cup Kalamata Olives pitted and sliced
  • ½ cup Feta Cheese crumbled
  • ¼ cup Olive Oil
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Dried Oregano
  • to taste Salt
  • to taste Black Pepper freshly ground

Instructions 

  1. 1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooled potatoes, red onion, cucumber, olives, and feta cheese.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and black pepper.
  4. 4. Pour the dressing over the potato mixture and toss gently to combine.
  5. 5. Chill in the refrigerator for at least 1 hour before serving.
