Ingredients 

Main Ingredients

  • 500 g potatoes peeled and diced
  • 300 g green beans trimmed and halved
  • 1 unit red onion thinly sliced
  • 2 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • to taste salt and pepper

Instructions 

  1. 1. Boil the potatoes in salted water for 10-15 minutes until tender. Drain and set aside.
  2. 2. In the same pot, blanch the green beans for 3-4 minutes until tender-crisp. Drain and rinse under cold water.
  3. 3. In a large bowl, combine the potatoes, green beans, and red onion.
  4. 4. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  5. 5. Pour the dressing over the salad and toss to combine. Serve warm or at room temperature.
