Ingredients

  • 2 pieces Chicken breasts boneless, skinless
  • 1 cup Shredded cheese cheddar or Mexican blend
  • 4 pieces Flour tortillas
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Season the chicken breasts with salt and pepper.
  3. 3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  4. 4. Let the chicken rest for a few minutes, then slice into thin strips.
  5. 5. Heat a skillet over medium heat and add a bit of olive oil.
  6. 6. Place a tortilla in the skillet, add some cheese, chicken strips, and more cheese on top, then cover with another tortilla.
  7. 7. Cook until the bottom tortilla is golden and the cheese starts to melt, then flip and cook the other side.
  8. 8. Remove from skillet, cut into wedges, and serve hot.
