- 1 cup Carrots, diced
- 1 cup Celery, diced
- 1 cup Cauliflower florets
- 1 cup Red bell pepper, diced
- 6 cloves Garlic, minced
- 2 cups White vinegar
- 1 cup Water
- 2 tablespoon Kosher salt
- 1 tablespoon Sugar
- 1 tablespoon Dried oregano
- 1 teaspoon Red pepper flakes
1. In a large bowl, combine the carrots, celery, cauliflower, red bell pepper, and garlic.
2. In a saucepan, bring the vinegar, water, salt, sugar, oregano, and red pepper flakes to a boil.
3. Pour the hot vinegar mixture over the vegetables and let it cool to room temperature.
4. Transfer the mixture to jars, cover, and refrigerate for at least 24 hours before serving.
