Ingredients

  • 2 lbs Pork shoulder cut into chunks
  • 1 tablespoon Fennel seeds toasted
  • 1 tablespoon Paprika
  • 1 teaspoon Red pepper flakes
  • 4 cloves Garlic minced
  • 1 tablespoon Salt
  • 1 teaspoon Black pepper freshly ground
  • ½ cup Red wine

Instructions 

  1. 1. In a large mixing bowl, combine pork shoulder, fennel seeds, paprika, red pepper flakes, garlic, salt, and black pepper.
  2. 2. Grind the mixture through a meat grinder using a coarse plate.
  3. 3. Add red wine to the ground meat and mix until well combined.
  4. 4. Form the mixture into sausages or patties.
  5. 5. Grill the sausages over medium-high heat until cooked through, about 10-12 minutes per side.
