Ingredients 

Main Ingredients

  • 1 lb chicken breast boneless, skinless
  • 4 cups chicken broth
  • 1 onion chopped
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions 

  1. 1. Turn on the Instant Pot and select the sauté function.
  2. 2. Add a bit of oil and sauté the onion, carrots, and celery until softened.
  3. 3. Add the garlic and sauté for another minute.
  4. 4. Add the chicken breast, chicken broth, salt, pepper, and thyme.
  5. 5. Close the lid and set the Instant Pot to high pressure for 10 minutes.
  6. 6. Once the cooking time is up, let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
  7. 7. Remove the chicken breast, shred it, and return it to the pot.
  8. 8. Stir and serve hot.
