Ingredients 

Main Ingredients

  • 3 cups Cooked rice preferably day-old
  • 2 tablespoon Vegetable oil
  • 1 cup Diced pineapple fresh or canned
  • 1 cup Diced ham
  • 2 Eggs beaten
  • 1 cup Frozen peas and carrots thawed
  • 3 tablespoon Soy sauce or to taste
  • 2 tablespoon Green onions chopped

Instructions 

  1. Heat oil in a wok over medium-high heat.
  2. Add diced ham and cook until slightly crispy.
  3. Push ham to the side and pour beaten eggs into the wok. Scramble until fully cooked.
  4. Add cooked rice, diced pineapple, peas and carrots. Stir well to combine.
  5. Pour soy sauce over the mixture and stir-fry for another 5 minutes.
  6. Garnish with chopped green onions and serve hot.
