Main Ingredients
- 1 lb Beef stew meat cut into bite-sized pieces
- 1 cup Pearl barley
- 1 large Onion chopped
- 3 cloves Garlic minced
- 2 large Carrots sliced
- 2 stalks Celery sliced
- 8 cups Beef broth
- 1 can Diced tomatoes 14.5 oz can
- 1 teaspoon Dried oregano
- 1 teaspoon Dried basil
- 1 teaspoon Salt or to taste
- ½ teaspoon Black pepper or to taste
- 2 tablespoon Olive oil
Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
Add onion and garlic, cook until softened.
Stir in carrots and celery, cook for a few more minutes.
Add beef broth, diced tomatoes, barley, oregano, basil, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for about 1 hour or until barley is tender.
Adjust seasoning if needed and serve hot.
