Ingredients 

Main Ingredients

  • 1 lb Beef stew meat cut into bite-sized pieces
  • 1 cup Pearl barley
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 large Carrots sliced
  • 2 stalks Celery sliced
  • 8 cups Beef broth
  • 1 can Diced tomatoes 14.5 oz can
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black pepper or to taste
  • 2 tablespoon Olive oil

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
  2. Add onion and garlic, cook until softened.
  3. Stir in carrots and celery, cook for a few more minutes.
  4. Add beef broth, diced tomatoes, barley, oregano, basil, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 1 hour or until barley is tender.
  6. Adjust seasoning if needed and serve hot.
