- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- 3 eggs large
- 1 teaspoon vanilla extract
- 1 cup almonds toasted and chopped
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, beat the eggs and vanilla extract. Gradually add to the dry ingredients, mixing until combined. Stir in the almonds.
Divide the dough in half. On a floured surface, shape each half into a log about 12 inches long. Place the logs on the prepared baking sheet and flatten slightly.
Bake for 25-30 minutes, or until golden brown. Remove from the oven and let cool for 10 minutes.
Using a sharp knife, cut the logs diagonally into ½-inch slices. Place the slices cut side down on the baking sheet.
Bake for another 10-15 minutes, or until crisp and golden. Cool completely on a wire rack.
