Ingredients 

Main Ingredients

  • 4 cups stale bread, cubed preferably Italian bread
  • 2 cups cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1 red onion, thinly sliced
  • ¼ cup extra virgin olive oil
  • 2 tablespoon red wine vinegar
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • ¼ cup fresh basil leaves, torn

Instructions 

  1. In a large mixing bowl, combine the cubed bread, cherry tomatoes, cucumber, and red onion.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
  3. Pour the dressing over the bread mixture and toss to combine.
  4. Let the salad sit for about 10 minutes to allow the bread to soak up the dressing.
  5. Just before serving, add the fresh basil leaves and toss gently.
