  • 4 pieces Chicken Breasts
  • 500 g Baby Potatoes halved
  • 100 g Pesto
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, toss the baby potatoes with olive oil, salt, and pepper.
  3. Spread the potatoes on a baking sheet and roast for 20-25 minutes until golden and crispy.
  4. While the potatoes are roasting, season the chicken breasts with salt and pepper.
  5. Heat a bit of olive oil in a pan over medium heat and cook the chicken breasts until golden and cooked through, about 5-7 minutes per side.
  6. Once the potatoes are done, toss them with the pesto in a mixing bowl.
  7. Serve the chicken breasts with the pesto potatoes on the side.
