Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup chopped pecans
  • 1 cup shredded coconut
  • 1 cup crushed pineapple, drained

Instructions 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking powder, baking soda, and salt; gradually add to the creamed mixture alternately with the buttermilk.
  5. Fold in the pecans, coconut, and pineapple.
  6. Pour batter into the prepared pan.
  7. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Allow to cool.
