Main Ingredients
- 1 cup Butter softened
- 1 cup Granulated Sugar
- 2 Large Eggs
- 1 teaspoon Vanilla Extract
- 2 cups All-Purpose Flour
- 1 teaspoon Baking Powder
- ½ teaspoon Baking Soda
- ½ teaspoon Salt
- 1 cup Buttermilk
- 1 cup Shredded Coconut
- 1 cup Chopped Pecans
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In another bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the creamed mixture alternately with the buttermilk, mixing well after each addition.
Fold in the shredded coconut and chopped pecans.
Drop dough by rounded tablespoonfuls onto the prepared baking sheet.
Bake for 10-12 minutes, or until the edges are lightly browned. Cool on wire racks.
